Best ever omelette sandwich

This recipe can double as a hearty breakfast AND a lazy lunch!

A great way to use up leftovers.


  • 2 garlic cloves

  • 2 shallots

  • 2 handfuls of sweet peppers of your own preference

  • 2 handfuls of cooked, diced potato

  • 2 handfuls meat of your choice (I used leftover Christmas ham)

  • 2 handfuls mushrooms (I used buttons)

  • 3 large eggs

  • 100mls milk

  • 1 tsp paprika

  • 1 tsp basil

  • a swig of vinegar (I used Apple & Lingonberry from IKEA)

  • a small bit of cooking oil (I used ‘1 calorie olive oil spray’)

  • seasoning

  • 2 slices of bread

  • a little butter


  1. Fry off the diced shallots and mushrooms in a little oil over a medium heat in a frying pan. Add the potato and cook until lightly crispy. Add the sliced or crushed garlic
  2. Sprinkle the herbs, spices and seasoning over the pan mixture. Then, add the meat and cook until piping hot.             NOTE:                                                                                                                                                                               If you are going to cook the peppers, add them to the pan now. I added them to the sandwich later on, I love that fresh juicy crunch
  3. Crack the 3 eggs into a jug and whisk with the milk.
  4.  Pour the egg mixture onto the frying pan.
  5. Once the egg is set, fold the omelette onto itself. Cut slices as you wish and transfer to a plate.
  6. Butter 2 slices of bread. If you want a real luxurious treat, use an artisan bread like tiger loaf or ciabatta. Plain white pan bread works just fine as well. Using an egg lifter, lift the omelette onto the bread and sprinkle over the peppers if you did not cook them. close the sandwich and slice it however you like.
